Cafe Au Lait is the reigning queen of the wedding industry and has been for over a decade. One quick search on Pinterest of "dahlia bridal bouquets" and you'll see what we mean. Short statured plants produce the iconic 8" champagne-colored blooms late in the season. However, the color of Cafe Au Lait blooms is dependent on day length and temperature, often beginning the season with pink hues.
Tip: Cafe Au Lait can be a bit stingy on bloom production (meaning she doesn't produce as many flowers per season as other varieties) so plant more of these than you think you'll need if growing for cut flowers.

Growing Guide
Dahlias are cold sensitive and should not be planted out until all danger of frost has passed in your area. Dahlias grow best in full sun (6+ hours of sunlight) and well-draining soil. Dahlias produce tubers which must be lifted in the fall in zones 7 and lower.
